The art of the Macaron
No, I’m not talking about the Macaroon… I’m talking about the Macaron! The French delicacy, which requires skill and a perfectionist to acquire the perfect balance of flavor and lightness…
Macaron is a French, so deliciously sweet meringue-based confection made with egg white, sugar, almond powder or ground almond, and food coloring. The macaron is then filled with ganache or buttercream filling and sandwiched between two biscuits (cookies). The name is derived from the Italian word macarone, maccarone or maccherone, the Italian meringue.
Now, Sint Maarten is home to quite a few exceptional people… Seems we attract all the talented and brilliant minds from all over the world. And today, I’m going to tell you about 1 of them: his name is Jack Bodart.
I heard thru the grapevine that there was this new master chocolatier opening up shop in Sint Maarten, who makes the best macarons on the island… Off course, I had to investigate and see this for myself… And I have to say, they were not lying!
Jack Bodart is a Master Chocolatier originally from Belgium (you know, where the finest chocolate comes from).
In November of 2013, Jack and his wife decided to embark on an adventure: moving to Sint Maarten! And man, are we happy for that! They have opened up a pastry shop inside the Sapphire Hotel lobby, only opened since a month and a half ago, and if you don’t know about them, you will totally miss out on the best Macarons on the island! Handsdown! That’s precisely why I am now writing about them! So when you come to Sint Maarten the next time, you too, can experience a REAL Macaron!
Jack is no stranger to baking pastries and making the finest chocolate… He’s been doing this forever! When he was 18 years old, he won Apprentice of the Year award in Belgium and won 2nd place at a pastry competition for making the best “Rijstevlaai” (It’s a cake made with rice, which is very popular in Belgium and the Netherlands, and tastes much better than it sounds!). He’s even baked for none other than Eva Longoria, when she had a charity event in Spain!
He’s learned how to bake and make chocolate from a world chocolatier, so he’s been taught well!
Together with their baby daughter, Jack and Séverine opened up shop in Sapphire Hotel (No, you don’t have to be a guest to go in to their shop… that would be a total crime seeing how awesome his chocolate and macarons are!) and are doing sweet business in their appropriately colored, pink and white shop.
In the future more flavors are to come, and each with a limited timeframe, so he will always have something new and fresh to offer his customers…
So, my advise to you: When in sxm, make sure to pass by Jack Bodart and have a taste of his sweet macarons…
